Homemade Twix Bars!!



Okay, so these were called Millionaire Shortbreads. I had copied down this recipe a couple of years ago so I don't remember what cookbook it came out of (Sorry!). I was looking for a recipe that was fairly simple and didn't need a lot of ingredients (and ones I already had on hand). These are really rich cookies so you might want to cut them smaller than what I did. Of course the kids and hubby don't think so. They are begging me to make more already!

These cookies have three layers: Base, Caramel, and Chocolate.

The base is--
1 1/2 sticks butter - the real stuff
3/4 C. Sugar
1 2/3 C. all purpose flour
1/2 C. corn starch
1 tea. baking powder

Cream the butter and sugar together then add the dry ingredients. The mixture is very crumbly. Press the base into a greased 9x13 pan. I used non stick spray. The recipe called for a buttered pan. Either way make sure the pan is coated well.
Bake at 350 for 20 minutes or until golden brown. Cool for 10 minutes.

While the base is cooling go ahead and make the caramel.

Caramel filling--

3/4 C. Sugar
1 1/2 sticks butter -- again the real stuff
1 T. corn syrup or honey-- I used honey
1- 14 oz can of sweeten condensed milk
few drops of vanilla

Mix everything but the vanilla in a saucepan over medium heat. Stir continuously. Don't stop. I did and had burnt sugar/milk flakes in my caramel. (still tasted good though). Bring to a boil. Still stirring. Boil for 5-7 minutes while stirring. Remove from heat and add vanilla. Stir another 2 to 3 more minutes off the heat. Pour over cooled shortbread. Let sit until completely cooled.

The chocolate top is just melted chocolate chips. About half a bag (6 oz). Of course you could melt some dipping chocolate and dip these to make them more like Twix bars. But I'm too lazy for that. These say to cover and store in the fridge. But it does make the caramel hard. You've been warned! :)

I really like making bar cookies. They are much easier since you only have to bake once instead of over and over. Anybody else have good bar cookie recipes? Please share!!
